Ingredients

Scale

Ingredients You’ll Need

  • 1½ cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¼ tsp garlic powder (optional)

  • ½ tsp dried thyme or Italian seasoning

  • ¼ cup cold unsalted butter, cubed

  • ¾ cup cottage cheese (small curd preferred)

  • ⅓ cup milk or buttermilk

  • 2 tbsp chopped fresh herbs (such as chives, parsley, or dill)

Optional Add-Ins:

  • ¼ cup shredded sharp cheddar cheese

  • Cracked black pepper on top

  • Melted butter brushed on after baking

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 425°F (220°C).

  2. Line a baking sheet with parchment paper.

Step 2: Mix the Dry Ingredients
3. In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and dried herbs.

Step 3: Cut in the Butter
4. Add cold butter to the dry mixture and cut it in using a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 4: Add Wet Ingredients
5. Stir in cottage cheese, milk, and fresh herbs. Mix gently just until the dough comes together.
6. Do not overmix—the dough should be slightly lumpy but cohesive.

Step 5: Scoop & Bake
7. Drop heaping spoonfuls (about ¼ cup each) onto the prepared baking sheet.
8. Optional: sprinkle tops with extra herbs or cheese.
9. Bake for 12–15 minutes, or until tops are golden brown.

Step 6: Finish & Serve
10. Optional: Brush warm biscuits with melted butter for extra flavor.
11. Serve warm as a savory side or enjoy on their own.

Notes

Use Cold Butter – Cold butter creates steam in the oven for flakiness.
Don’t Overmix – Gentle mixing keeps the texture light and tender.
Customize Herbs – Use what you love or have on hand.
Add Cheese – Shredded cheese adds richness and extra savory flavor.
Serve Warm – These biscuits are best fresh from the oven.
