Ingredients

  • 1 packet active dry yeast (2¼ tsp)

  • 2 tbsp honey or maple syrup

  • ¾ cup warm water (110°F)

  • 1 cup cottage cheese (full-fat or low-fat, room temperature)

  • 2 tbsp olive oil or melted butter

  • 1 egg

  • 1½ tsp salt

  • to 4 cups all-purpose flour or bread flour (start with less and add as needed)

  • Optional: 2 tbsp ground flaxseed or wheat germ (for added fiber)


Instructions

Step 1: Proof the Yeast

  1. In a large bowl or the bowl of a stand mixer, combine warm water, honey, and yeast.

  2. Let sit for 5–10 minutes until foamy and bubbly. This activates the yeast.

Step 2: Mix the Wet Ingredients
3. Stir in cottage cheese, olive oil, egg, and salt.
4. Mix until mostly smooth (some small curds are fine and will melt during baking).

Step 3: Add Flour & Knead
5. Begin adding flour 1 cup at a time, stirring or mixing on low.
6. Add ground flaxseed or wheat germ if using.
7. Continue mixing until a soft dough forms that pulls away from the sides but is slightly sticky.
8. Knead on medium speed (or by hand on a floured surface) for 6–8 minutes until smooth and elastic.

Step 4: First Rise
9. Transfer the dough to a greased bowl, cover with a towel or plastic wrap, and let rise in a warm place for 1 to 1½ hours, or until doubled in size.

Step 5: Shape the Loaf
10. Punch down the dough and turn it onto a lightly floured surface.
11. Shape into a loaf and place in a greased 9×5-inch loaf pan.
12. Cover and let rise again for 30–45 minutes, until puffy and just above the edge of the pan.

Step 6: Bake the Bread
13. Preheat your oven to 375°F (190°C).
14. Bake the bread for 30–35 minutes, or until golden brown and the loaf sounds hollow when tapped.
15. Optional: Use an instant-read thermometer—internal temp should reach 190°F.

Step 7: Cool & Slice
16. Let cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely before slicing.

Notes

Use Warm Water – Not too hot, or you’ll kill the yeast (around 110°F is perfect).
Drain Cottage Cheese – If it’s very wet, pat dry or blend for a smoother dough.
Don’t Over-Flour – Keep the dough slightly tacky for soft bread.
Let It Cool – Slicing too soon can make the texture gummy.
Freeze Slices – Store in a zip bag for quick high-protein toast on busy mornings.
