  • 1 (12 oz) can evaporated milk
  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken
  • Fresh thyme
  • Black pepper
  • Salt
  • 2 cups all-purpose flour
  • 1 tablespoon, plus 1 teaspoon, baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a Dutch oven, melt butter over medium-high heat. Add onion, carrots, and celery; cook until softened. Stir in garlic.
  2. Add flour to create a roux, then gradually mix in evaporated milk and chicken stock, stirring continuously until thickened.
  3. Bring to a boil and add shredded chicken along with seasonings. Simmer uncovered.
  4. For dumplings, combine dry ingredients and mix wet ingredients separately. Combine both mixtures until just mixed.
  5. Drop spoonfuls of dough into the simmering soup without lifting the lid for about 15-20 minutes.
