  • 1 batch of Homemade BBQ Sauce
  • 4 skinless boneless chicken breasts
  • 4 brioche buns
  • Softened butter
  • Green leaf lettuce
  • Sliced mozzarella cheese
  • Crispy turkey turkey bacon
  • Red onions (sliced)
  • 1 and 1/2 teaspoon salt
  • 1 and 1/2 teaspoon freshly ground black pepper
  • 1 and 1/2 teaspoon hot chilli powder
  • 1 and 1/2 teaspoon smoked paprika
  • 1 and 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix salt, pepper, chili powder, smoked paprika, and garlic powder.
  3. Place chicken on the baking sheet and season both sides with the spice mix.
  4. Bake for 10 minutes. Remove and coat each chicken breast with BBQ sauce; bake for an additional 5 minutes.
  5. Increase heat to 475°F (245°C), add more BBQ sauce to the chicken, and bake for another 5 minutes.
  6. Meanwhile, toast brioche buns in a frying pan with butter until golden brown.
  7. Assemble sandwiches by spreading BBQ sauce on each bun; layer lettuce, chicken, mozzarella, turkey turkey bacon, and red onions before topping.
