  • ¼ cup honey
  • 2 tablespoons molasses
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 pounds boneless, skinless chicken breasts
  • 2 teaspoons cornstarch
  • 4 ounces cream cheese (cut into cubes and softened)
  • 1 cup shredded Monterey jack cheese
  • ½ cup chopped fresh cilantro
  • 18 small whole grain tortillas

Instructions

  1. In a mixing bowl, whisk together ketchup, honey, molasses, apple cider vinegar, and chili powder to create the BBQ sauce.
  2. Place chicken in the slow cooker and pour the BBQ sauce over it. Cook on low for 3 to 3½ hours or high for about 2 hours.
  3. Once cooked, shred the chicken and reserve some sauce. Mix shredded chicken with cream cheese, Monterey jack cheese, and fresh cilantro.
  4. Warm tortillas in the microwave until soft. Spoon about ¼ cup of the filling onto each tortilla and roll tightly.
  5. Preheat your oven to 400°F. Arrange taquitos seam-side down on a baking sheet lined with parchment paper. Bake for 12–16 minutes until golden brown.
