  • 1 cup long-grain white rice (uncooked)

  • 2 cups water or vegetable broth

  • ½ tsp salt (adjust to taste)

For the Corn Butter Mixture:

  • 1 tbsp butter (plus more to taste)

  • 1 cup sweet corn kernels (fresh, canned, or frozen)

  • 1 clove garlic (minced)

  • ¼ tsp black pepper

  • 1 tbsp chopped green onions or parsley (optional for garnish)

Optional Add-Ins:

  • 1 tbsp grated Parmesan cheese

  • 1 tsp soy sauce for umami

  • A pinch of red pepper flakes for heat

  • ¼ tsp smoked paprika for a smoky kick


Instructions

Step 1: Cook the Rice

  1. In a medium saucepan, combine rice, water (or broth), and salt.

  2. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.

  3. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

Step 2: Prepare the Buttered Corn

  1. In a skillet over medium heat, melt the butter.

  2. Add garlic and cook for 30 seconds until fragrant.

  3. Stir in the corn and season with black pepper. Cook for 3–5 minutes, stirring occasionally, until corn is heated through and slightly golden.

Step 3: Combine and Serve

 

  1. Add the buttered corn mixture to the cooked rice. Stir well to combine evenly.

  2. Taste and adjust salt or add extra butter as desired.

  3. Garnish with chopped green onions or parsley before serving.

Notes

Use Broth for More Flavor – Swap water with broth for added depth.
Fresh or Frozen Corn – Both work well; just thaw frozen corn before using.
Add Cheese – Parmesan or cheddar adds a savory touch.
