  • 2 tablespoons tomato paste
  • 4 cups low-sodium beef broth
  • 4 medium carrots (sliced)
  • 1 cup celery (diced)
  • 1 pound mini red potatoes (halved)
  • 8 ounces baby Bella mushrooms (halved)
  • Fresh parsley (for garnish)

Instructions

  1. In a large bowl, combine beef chunks with flour, salt, and pepper.
  2. Heat oil in a heavy-duty pot over medium-high heat. Brown the beef in batches until golden on all sides; set aside.
  3. Deglaze the pot with red grape juice, scraping up any browned bits.
  4. Sauté diced onion and minced garlic until fragrant.
  5. Stir in tomato paste and beef broth; return browned beef to the pot along with bay leaves and thyme.
  6. Cover and simmer on low for about 1.5 hours or until beef is tender.
  7. Preheat oven to 300°F while the stew simmers.
  8. Remove herbs, add carrots, celery, potatoes, and mushrooms; cover and transfer to the oven for about an hour until vegetables are tender.
  9. Adjust seasoning if needed and serve warm garnished with parsley.
