  • 2 pounds fresh asparagus spears
  • 1 yellow onion (chopped)
  • 3 garlic cloves (chopped)
  • 1 teaspoon fresh thyme (thick stems removed)
  • 4 cups chicken broth
  • Zest and juice of 1 small lemon
  • Salt and pepper (to taste)

Instructions

  1. Prepare the asparagus by trimming off the woody ends and chopping the stalks into smaller pieces.
  2. Set your Instant Pot to sauté mode and heat the olive oil. Add chopped asparagus and onion; cook until fragrant and golden brown for about 5 minutes.
