  • 4 Tbsp butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 ½ cups chicken broth
  • 1 cup uncooked parboiled rice
  • 8 oz sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp Tabasco sauce
  • 1 tsp Cajun seasoning (plus more to taste)
  • 1 green bell pepper, cored and diced
  • 4 oz cream cheese
  • ¾ cup shredded cheddar or Monterey Jack cheese
  • 1 pound cooked medium shrimp, peeled and deveined

Instructions

  1. Set your Instant Pot to sauté mode and melt the butter. Add diced onions and celery; sauté until soft.
  2. Pour in the chicken broth while scraping the pot's bottom to release any stuck bits. Turn off the sauté function.
  3. Layer uncooked rice, sliced mushrooms, garlic powder, Tabasco sauce, Cajun seasoning, diced bell pepper, and cream cheese into the pot without stirring.
  4. Secure the lid with the valve set to sealing. Cook on high pressure for 5 minutes.
  5. Allow for natural release for 5–10 minutes before venting any remaining steam.
  6. Stir in shrimp and shredded cheese until well combined. Adjust seasoning if needed before serving.
