Ingredients
- 1 Tbsp olive oil
- 1 cup diced onion
- 3 large garlic cloves, minced
- 3 ½ cups low sodium chicken broth
- 1 (13 oz) package chicken andouille sausage or smoked sausage, sliced into ½ inch pieces
- 1 (12 oz) package frozen cooked shrimp – tail off, peeled and deveined
- 1 pound uncooked cavatappi or penne pasta
- 1–2 cups sliced or quartered mushrooms
- 1 Tbsp cajun seasoning
- 1 (14.5 oz) can fire roasted tomatoes
- 1 (8 oz) package cream cheese, softened
- 1 bell pepper, cored and thinly sliced
- 1 cup shredded or grated parmesan cheese
Instructions
- Set your Instant Pot to sauté mode. Add olive oil, then sauté diced onions until translucent (3-4 minutes). Stir in minced garlic for 20 seconds.
- Pour in chicken broth and deglaze the pot; layer sausage slices, mushrooms, uncooked pasta, Cajun seasoning, and fire roasted tomatoes on top without stirring.
- Secure the lid and cook on high pressure for 4 minutes. Perform a quick release once done.
- Stir in softened cream cheese and sliced bell peppers along with frozen shrimp; cover for 5 minutes on warm setting until heated through.
- Mix well before serving topped with parmesan cheese.
