  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 3 large garlic cloves, minced
  • 3 ½ cups low sodium chicken broth
  • 1 (13 oz) package chicken andouille sausage or smoked sausage, sliced into ½ inch pieces
  • 1 (12 oz) package frozen cooked shrimp – tail off, peeled and deveined
  • 1 pound uncooked cavatappi or penne pasta
  • 12 cups sliced or quartered mushrooms
  • 1 Tbsp cajun seasoning
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1 (8 oz) package cream cheese, softened
  • 1 bell pepper, cored and thinly sliced
  • 1 cup shredded or grated parmesan cheese

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil, then sauté diced onions until translucent (3-4 minutes). Stir in minced garlic for 20 seconds.
  2. Pour in chicken broth and deglaze the pot; layer sausage slices, mushrooms, uncooked pasta, Cajun seasoning, and fire roasted tomatoes on top without stirring.
  3. Secure the lid and cook on high pressure for 4 minutes. Perform a quick release once done.
  4. Stir in softened cream cheese and sliced bell peppers along with frozen shrimp; cover for 5 minutes on warm setting until heated through.
  5. Mix well before serving topped with parmesan cheese.
