  • 2 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 2 Tbsp dry onion flakes
  • 1 tsp garlic powder
  • ¼ tsp kosher salt
  • ½ tsp oregano
  • ¼ tsp cayenne pepper
  • ¼ tsp black pepper
  • 8 ounces linguine or fettuccine
  • 1 pound frozen uncooked peeled and deveined chicken
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • ¼ cup olive oil
  • ¼ cup heavy cream (optional)
  • ½ cup shredded parmesan cheese

Instructions

  1. Pour water into the Instant Pot and add bouillon, onion flakes, garlic powder, salt, oregano, cayenne pepper, and black pepper. Mix well.
  2. Break pasta in half and scatter it in a crisscross pattern in the pot.
  3. In a suitable pan for pot-in-pot cooking, place chicken topped with diced peppers and drizzle with olive oil.
  4. Place a trivet in the Instant Pot over the pasta and set the uncovered chicken pan on top.
  5. Secure the lid, ensure the valve is set to sealing, and cook on manual/pressure for 6 minutes.
  6. Allow natural pressure release for 5-10 minutes before venting.
  7. Remove the pan and trivet carefully; stir together chicken, peppers, and pasta. Add cream and parmesan if desired.
