  • 1 pound ground beef
  • 1 cup finely chopped yellow onion
  • 3 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 ¾ cups low sodium beef broth
  • 2 cups elbow macaroni pasta (uncooked)
  • 30 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 1 ½ cups shredded cheddar cheese

Instructions

  1. Press 'Sauté' on the Instant Pot. Add ground beef and cook until browned, crumbling as you go. Drain excess grease if desired.
  2. Add chopped onion and sauté until softened (about 2 minutes). Stir in minced garlic and chopped bell pepper for another minute before turning off the sauté function.
  3. Pour in the beef broth, ensuring to scrape up any bits stuck to the bottom of the pot. Add Italian seasoning, Worcestershire sauce, garlic powder, salt, and pepper; mix well.
  4. Layer uncooked macaroni over the mixture without stirring. On top, add canned diced tomatoes and tomato sauce.
  5. Close the lid securely and set the steam release valve to sealing position. Cook on high pressure for 4 minutes.
  6. After cooking, perform a quick release by moving the valve to venting position. Once safe, open the lid.
  7. Stir gently to separate pasta pieces; add shredded cheese until melted.
  8. Serve hot with optional fresh parsley on top.
