Ingredients

  • Zest of 1 orange
  • 1/2 cup orange juice
  • 1/4 cup brown sugar (or honey/maple syrup)
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup long grain white rice, rinsed and drained
  • 1 cup water
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. In a bowl, whisk together the orange zest, orange juice, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, and optional red pepper flakes.
  2. Cut the chicken into bite-sized pieces. Heat olive oil in the Instant Pot using sauté mode and add the chicken. Brown for about 4–5 minutes.
  3. Pour the prepared sauce over the chicken and stir well.
  4. For pot-in-pot cooking: Place a trivet over the chicken. In an oven-safe bowl, combine rinsed rice and water; place this bowl on top of the trivet.
  5. Seal the Instant Pot lid and cook on high pressure for 4 minutes.
  6. Allow natural release for 10 minutes before quick-releasing any remaining pressure.
  7. Thicken the sauce by mixing cornstarch with water and stirring it into the pot while on sauté mode until thickened.
  8. Serve hot over rice garnished with green onions and sesame seeds.
