Ingredients
- Zest of 1 orange
- 1/2 cup orange juice
- 1/4 cup brown sugar (or honey/maple syrup)
- 1/4 cup low sodium soy sauce
- 3 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon olive oil
- 1.5 pounds boneless, skinless chicken breasts
- 1 cup long grain white rice, rinsed and drained
- 1 cup water
- Sesame seeds and sliced green onions for garnish
Instructions
- In a bowl, whisk together the orange zest, orange juice, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, and optional red pepper flakes.
- Cut the chicken into bite-sized pieces. Heat olive oil in the Instant Pot using sauté mode and add the chicken. Brown for about 4–5 minutes.
- Pour the prepared sauce over the chicken and stir well.
- For pot-in-pot cooking: Place a trivet over the chicken. In an oven-safe bowl, combine rinsed rice and water; place this bowl on top of the trivet.
- Seal the Instant Pot lid and cook on high pressure for 4 minutes.
- Allow natural release for 10 minutes before quick-releasing any remaining pressure.
- Thicken the sauce by mixing cornstarch with water and stirring it into the pot while on sauté mode until thickened.
- Serve hot over rice garnished with green onions and sesame seeds.
