Ingredients
- 2 lbs chicken thighs (cut into 1–2 inch pieces)
- 1/3 cup low-sodium soy sauce
- 2 tablespoons sesame oil
- 20 oz can pineapple chunks (with juice)
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1/2 cup brown sugar
- 1/3 cup hoisin sauce
- 2 tablespoons cornstarch
- Green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prepare the pineapple by opening the can and reserving 1/4 cup of juice.
- In the Instant Pot, combine chicken thighs, soy sauce, sesame oil, minced garlic, grated ginger, hoisin sauce, brown sugar, red pepper flakes (if using), and pineapple chunks with their juice.
- Close the lid and seal the pressure cooker. Cook on High Pressure for 4 minutes.
- After cooking, allow a natural release for 5 minutes before manually releasing any remaining pressure.
- Open the lid and select the Sauté function on LOW. In a small bowl, mix cornstarch with reserved pineapple juice until smooth and add to the pot.
- Stir gently while cooking on Sauté until the sauce thickens. Adjust thickness with more cornstarch if desired.
- Let stand for 5–7 minutes before serving over rice, garnished with green onions and sesame seeds.
