You can achieve this delicious, home-cooked flavor without spending hours in the kitchen, thanks to the efficiency of the Instant Pot. With its one-pot cooking method and quick preparation time, this dish is ideal for busy cooks who crave hearty comfort food.

Ingredients

Scale
  • 3 pound boneless beef chuck roast
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 large sweet yellow onion (coarsely chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 ½ cups low sodium beef broth
  • 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 6 medium carrots (cut into 1-inch pieces)
  • 1.5 pounds whole baby potatoes
  • 2 tablespoons cornstarch (optional, for thickening gravy)
  • 2 tablespoons water (optional, for thickening gravy)

Instructions

  1. Cut the beef chuck roast in half and season with salt and pepper.
  2. In the Instant Pot on sauté mode, heat olive oil and sear the beef on both sides until browned, about 4 minutes per side. Transfer to a plate.
  3. Sauté onions until softened; add garlic and stir for another minute.
  4. Add tomato paste, Worcestershire sauce, and beef broth; mix well.
  5. Return beef to the pot with thyme; seal lid and cook on high pressure for 60 minutes. Allow a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  6. Add carrots and potatoes on top of the beef; seal again and cook for an additional 5 minutes under high pressure.
  7. Release pressure naturally for another 10 minutes before serving.
  8. Shred beef with forks if desired and thicken gravy using cornstarch mixed with water if preferred.
