  • 1 1/2 pounds russet potatoes (quartered)
  • 1 package (12.8 oz) smoked chicken sausage (sliced into 2-inch pieces)
  • 1 1/2 pounds large shrimp (shell-on)
  • 3 ears corn (halved)
  • 4 cloves garlic
  • 1 tablespoon onion powder
  • 2 tablespoons Cajun seasoning
  • 12 oz light beef broth (or water for a lighter option)
  • Fresh parsley leaves (for garnish)
  • Lemon wedges

Instructions

  1. Wash and quarter the potatoes; set aside. Slice the smoked chicken sausage into pieces.
  2. Layer quartered potatoes at the bottom of the Instant Pot, followed by sliced sausage and halved corn.
  3. Sprinkle onion powder, garlic powder, Cajun seasoning, minced garlic, and bay leaves over the layers. Pour in beef broth and water to cover.
  4. Seal the lid and cook on high pressure for 2 minutes; perform a quick release once done.
  5. Stir in shrimp and close the lid again for another minute to ensure they cook through.
  6. After one minute, release steam carefully, stir in melted butter and additional seasoning if desired. Serve hot with fresh parsley and lemon wedges.
