- 1 1/2 pounds large shrimp (shell-on)
- 3 ears corn (halved)
- 4 cloves garlic
- 1 tablespoon onion powder
- 2 tablespoons Cajun seasoning
- 12 oz light beef broth (or water for a lighter option)
- Fresh parsley leaves (for garnish)
- Lemon wedges
Instructions
- Wash and quarter the potatoes; set aside. Slice the smoked chicken sausage into pieces.
- Layer quartered potatoes at the bottom of the Instant Pot, followed by sliced sausage and halved corn.
- Sprinkle onion powder, garlic powder, Cajun seasoning, minced garlic, and bay leaves over the layers. Pour in beef broth and water to cover.
