- 1 Tbsp olive oil
- 1 medium onion, diced
- 1 (12 oz) package beef smoked sausage, halved and sliced
- 1 Tbsp minced garlic
- 4 cups chicken broth
- 1 pound Russet potatoes, peeled and cut into cubes
- Fresh cracked pepper
- 1 tsp smoked paprika
- 1 (8 oz) can tomato sauce
- 2 large kale leaves, stem removed and chopped
- ¼ cup heavy cream
Instructions
- Begin by dicing the onion and mincing the garlic. Cube the Russet potatoes and chop the kale leaves.
- Set your Instant Pot to the sauté function. Add olive oil and sauté the onion for about 2-3 minutes until translucent. Stir in garlic and sliced beef sausage; cook for another 2 minutes.
- Pour in the chicken broth along with cubed potatoes, fresh cracked pepper, smoked paprika, and tomato sauce. Stir well to combine.
- Close the lid securely and set to high pressure for 4 minutes. After cooking, carefully perform a quick release of pressure.
