  • 1 Tbsp olive oil
  • 1 medium onion, diced
  • 1 (12 oz) package beef smoked sausage, halved and sliced
  • 1 Tbsp minced garlic
  • 4 cups chicken broth
  • 1 pound Russet potatoes, peeled and cut into cubes
  • Fresh cracked pepper
  • 1 tsp smoked paprika
  • 1 (8 oz) can tomato sauce
  • 2 large kale leaves, stem removed and chopped
  • ¼ cup heavy cream

Instructions

  1. Begin by dicing the onion and mincing the garlic. Cube the Russet potatoes and chop the kale leaves.
  2. Set your Instant Pot to the sauté function. Add olive oil and sauté the onion for about 2-3 minutes until translucent. Stir in garlic and sliced beef sausage; cook for another 2 minutes.
  3. Pour in the chicken broth along with cubed potatoes, fresh cracked pepper, smoked paprika, and tomato sauce. Stir well to combine.
  4. Close the lid securely and set to high pressure for 4 minutes. After cooking, carefully perform a quick release of pressure.
  5. Once released, open the lid and stir in chopped kale and heavy cream until well blended. Taste and adjust seasoning if needed before serving hot.
