Ingredients
- 4 or 5 medium-large bell peppers (any color)
- ½ pound lean ground beef or ground turkey
- 1 cup cooked brown rice
- ½ cup finely chopped yellow onion
- 15-ounce can diced tomatoes
- 8-ounce can tomato sauce (divided)
- 2 teaspoons dried Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella, divided)
Instructions
- Prepare the bell peppers by slicing off the tops and removing seeds.
- Brown the ground beef in the Instant Pot using the sauté function; add onion if desired.
- Mix browned meat (or uncooked), rice, onion, diced tomatoes, ¼ cup tomato sauce, seasonings, and half of the cheese in a bowl.
- Pour water into the Instant Pot and place a metal trivet inside.
- Fill each pepper with the mixture and arrange on the trivet; top with remaining tomato sauce.
- Pressure cook for 8 minutes if browning meat first or 16 minutes if not.
- Quick release steam when done and check internal temperature reaches at least 165°F.
- Top with remaining cheese and let it melt before serving.
