  • 3 cups elbow macaroni
  • 2 cans evaporated milk (12 oz each)
  • 1/3 cup skim milk
  • 2 large eggs
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • Coarse salt and black pepper
  • 2 packages extra-sharp cheddar cheese (8 oz each), grated
  • 1 package Monterey Jack cheese (8 oz), grated
  • Paprika for sprinkling

Instructions

  1. Preheat the oven to 375°F. Butter a 9-by-13-inch glass baking dish.
  2. Boil salted water in a large pot, cook the macaroni until al dente, then drain and return it to the pot. Stir in the butter until melted.
  3. In a medium bowl, whisk together evaporated milk, skim milk, eggs, seasoned salt, garlic powder, coarse salt, and pepper.
  4. Mix both types of grated cheese in another bowl.
  5. Layer one-third of the macaroni in the baking dish followed by one-third of the cheese mixture; repeat until all ingredients are used.
  6. Pour the milk mixture over the layers and sprinkle with paprika.
  7. Bake for 35 to 45 minutes until golden brown on top; let cool for 10 minutes before serving.
