Ingredients
For the Muffins:

1 lb ground beef or chicken

1 cup shredded mozzarella cheese

½ cup shredded cheddar cheese

4 large eggs

1 tsp Italian seasoning

½ tsp garlic powder

½ tsp onion powder

½ tsp salt

¼ tsp black pepper

¼ tsp crushed red pepper flakes (optional)

2 tbsp grated Parmesan cheese (optional, for topping)
For the Pizza Flavor Boost:

¼ cup no-sugar-added tomato paste or marinara (optional for keto version)

½ tsp dried oregano

¼ tsp paprika

¼ cup mini beef pepperoni or chopped cooked sausage
Instructions
Step 1: Preheat & Prep

Preheat oven to 375°F (190°C).

Grease a muffin tin or line with silicone liners.
Step 2: Mix the Base
3. In a large bowl, whisk the eggs until well combined.
4. Add ground beef or chicken, mozzarella, cheddar, Italian seasoning, garlic powder, onion powder, salt, pepper, and red pepper flakes.
5. Mix until all ingredients are evenly distributed.
Step 3: Add the Pizza Boosters
6. Stir in tomato paste (if using), oregano, paprika, and chopped beef pepperoni or sausage.
7. Mix well until everything is combined into a thick, meaty batter.
Step 4: Fill & Top
8. Spoon the mixture evenly into the muffin cups, filling each about ¾ full.
9. Sprinkle the tops with grated Parmesan for a golden, cheesy crust.
Step 5: Bake
