For the Cheesesteak Filling:

  • 1 lb ground beef (or thinly sliced beef steak)

  • 1 tbsp olive oil

  • 1 green bell pepper, diced

  • 1 small onion, diced

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • 1 cup shredded provolone or mozzarella cheese

For the Keto Dough (Fathead Style):

  • 1½ cups shredded mozzarella cheese

  • 2 tbsp cream cheese

  • ¾ cup almond flour

  • 1 large egg

  • ½ tsp baking powder

  • ¼ tsp salt

Optional Toppings:

  • Sesame seeds

  • Melted butter for brushing


Instructions

Step 1: Make the Filling
Heat olive oil in a skillet over medium heat.
Add diced peppers and onions, and sauté for 3–4 minutes until soft.
Add ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper.
Cook until beef is browned and fully cooked.
Stir in shredded cheese until melted. Set aside to cool slightly.

Step 2: Prepare the Dough
In a microwave-safe bowl, combine shredded mozzarella and cream cheese.
Microwave in 30-second bursts until melted and smooth.
Add almond flour, egg, baking powder, and salt.
Mix until a dough forms. If sticky, chill for 5–10 minutes.

Step 3: Roll Out the Dough
Place dough between two pieces of parchment paper.
Roll into a rectangle about ¼ inch thick.
Remove the top layer of parchment.

Step 4: Assemble the Rolls
Spread the cheesesteak mixture evenly over the dough, leaving a ½-inch border.
Starting from the long edge, gently roll the dough into a log using the parchment for support.
Slice into 6–8 even rolls.

Step 5: Bake
Place rolls on a parchment-lined baking sheet.
Brush tops with melted butter and sprinkle with sesame seeds if desired.
Bake at 375°F (190°C) for 18–22 minutes, or until golden brown and cooked through.

 

Step 6: Cool & Serve
Let the rolls cool slightly before serving. Enjoy warm with a side salad or dipping sauce.

Notes

Chill the Dough – Makes it easier to roll and less sticky.
Don’t Overfill – Too much filling can cause the dough to tear.
Seal the Edges – Pinch the ends slightly to keep the filling inside.
Reheat Gently – Use the oven or toaster oven for best texture.
