Ingredients
For the Soup:

1 tbsp olive oil

1 lb ground beef (or turkey)

1 small yellow onion, diced

4 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1 tsp salt

½ tsp black pepper

¼ tsp red pepper flakes (optional)

2 tbsp tomato paste

1 can (28 oz) crushed tomatoes

1 can (14.5 oz) diced tomatoes

4 cups low-sodium beef or chicken broth

8 oz lasagna noodles, broken into pieces

1 bay leaf
For the Cheese Topping:

1 cup ricotta cheese
-
½ cup shredded mozzarella
-
¼ cup grated Parmesan cheese

Salt and pepper, to taste

Chopped fresh parsley or basil for garnish
Instructions
Step 1: Brown the Beef and Aromatics

In a large pot, heat olive oil over medium heat.

Add the ground beef and cook until browned, breaking it up with a spoon (about 5–6 minutes).

Add diced onion and sauté until softened, about 3 minutes.

Stir in garlic, oregano, basil, salt, pepper, and red pepper flakes. Cook for 1 more minute until fragrant.
Step 2: Build the Soup Base

Stir in tomato paste and cook for 1–2 minutes to deepen flavor.

Add crushed tomatoes, diced tomatoes, broth, and bay leaf.

Bring to a boil, then reduce heat and simmer uncovered for 10 minutes.
Step 3: Add the Noodles
