  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • ¼ cup dry white grape juice
  • 2 cups cherry tomatoes
  • ½ cup kalamata olives
  • ¼ cup lemon juice
  • Fresh parsley and thyme for garnishing

Instructions

  1. Preheat your oven to 400°F.
  2. Season cod with salt and pepper; drizzle olive oil in a baking dish and arrange the fillets inside. Cover with foil and bake for 12 minutes.
  3. In a skillet, melt butter over medium-high heat, add garlic and red pepper flakes, cooking for about 30 seconds. Season and pour in grape juice; boil for 1-2 minutes.
  4. Stir in cherry tomatoes, olives, and lemon juice; simmer until tomatoes burst (5–10 minutes). Add herbs.
  5. Remove foil from the cod, pour sauce over it, spread tomatoes and olives around, then return to the oven for an additional 5 minutes.
