- 1.5 pounds boneless, skinless chicken breasts
- 1 cup chopped yellow onion
- 3 cloves garlic (minced)
- 2 cups low sodium chicken broth
- 1.5 cups water
- 1.5 cups orzo pasta
- 3 tablespoons lemon juice
- 2 cups chopped fresh spinach
- ⅓ cup grated Parmesan cheese
Instructions
- Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook until fully cooked through (165°F), about 4-8 minutes per side. Remove and cover to keep warm.
- In the same skillet, add another tablespoon of olive oil and sauté the onion until softened (about 2-3 minutes), then stir in minced garlic for an additional 30 seconds.
- Pour in chicken broth, water, orzo pasta, salt, and pepper; stir to combine and bring to a simmer. Cover and cook for about 8-11 minutes until orzo is tender.
- Once cooked, stir in butter, lemon zest, lemon juice, grated Parmesan cheese, and spinach until wilted. Slice the chicken and mix it back into the skillet before serving.
