Description

This Lemon Chicken Orzo is a delightful one-pot meal that combines tender chicken breasts with zesty lemon, fresh spinach, and creamy Parmesan for an unforgettable dining experience.

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup chopped yellow onion
  • 3 cloves garlic (minced)
  • 2 cups low sodium chicken broth
  • 1.5 cups water
  • 1.5 cups orzo pasta
  • 3 tablespoons lemon juice
  • 2 cups chopped fresh spinach
  • ⅓ cup grated Parmesan cheese

Instructions

  1. Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook until fully cooked through (165°F), about 4-8 minutes per side. Remove and cover to keep warm.
  2. In the same skillet, add another tablespoon of olive oil and sauté the onion until softened (about 2-3 minutes), then stir in minced garlic for an additional 30 seconds.
  3. Pour in chicken broth, water, orzo pasta, salt, and pepper; stir to combine and bring to a simmer. Cover and cook for about 8-11 minutes until orzo is tender.
  4. Once cooked, stir in butter, lemon zest, lemon juice, grated Parmesan cheese, and spinach until wilted. Slice the chicken and mix it back into the skillet before serving.
