- 2 boneless, skinless chicken breasts (8–9 oz each)
- 1 large egg
- 1 Tbsp all-purpose flour
- 3/4 cup Panko bread crumbs
- 1 Tbsp minced fresh oregano
- 2 tsp lemon zest
- 1/2 tsp garlic powder
- Salt and pepper
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded provolone cheese
- 1/3 cup shredded Romano cheese
- 1/3 cup olive oil
Instructions
- Preheat the oven to 350°F. Season chicken with salt and let it rest at room temperature for about 10 minutes.
- In one shallow dish, whisk the egg and flour until smooth. In another dish, mix Panko bread crumbs, Romano cheese, oregano, lemon zest, garlic powder, salt, and pepper.
- Coat each chicken breast in the egg mixture followed by pressing into the breadcrumb mixture until well-coated.
- Heat olive oil in a non-stick skillet over medium-high heat. Fry two chicken cutlets until golden brown on each side (about 4 minutes total).
- Transfer cooked chicken to a rimmed baking sheet lined with parchment paper. Repeat with remaining cutlets.
- Mix mozzarella and provolone cheeses in a bowl; sprinkle over the chicken.
- Bake for about 8-10 minutes until the internal temperature reaches 165°F.
- Garnish with remaining oregano and serve warm with lemon wedges.
