  • 2 chicken breasts (pounded to 1/4 inch thick)
  • 12 tablespoons cajun seasoning or all-purpose chicken seasoning
  • 2 tablespoons olive oil
  • 1/3 cup chicken stock
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 3/4 cups dry white grape juice
  • 3/4 cups chicken stock
  • 3 tablespoons fresh lemon juice + zest of one lemon
  • 1 cup half and half, room temperature
  • 1/2 lb angel hair pasta
  • 2/3 cup freshly shredded Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Season both sides of the chicken with cajun seasoning.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken for about 3-4 minutes per side until golden brown. Add chicken stock, cover, and simmer for an additional 5 minutes. Remove from pan.
  3. In the same skillet, melt butter over medium heat, add minced garlic, and cook until fragrant. Season with salt and pepper.
  4. Stir in white grape juice and cook for about 2 minutes to reduce slightly. Add more chicken stock and lemon juice, then gently stir in half-and-half.
  5. Add angel hair pasta directly into the sauce; simmer while stirring frequently until al dente.
  6. Gradually mix in Parmesan cheese until melted. Garnish with fresh parsley before serving.
