- 2 chicken breasts (pounded to 1/4 inch thick)
- 1–2 tablespoons cajun seasoning or all-purpose chicken seasoning
- 2 tablespoons olive oil
- 1/3 cup chicken stock
- 4 tablespoons butter
- 6 cloves garlic, minced
- 3/4 cups dry white grape juice
- 3/4 cups chicken stock
- 3 tablespoons fresh lemon juice + zest of one lemon
- 1 cup half and half, room temperature
- 1/2 lb angel hair pasta
- 2/3 cup freshly shredded Parmesan cheese
- Fresh parsley for garnish
Instructions
- Season both sides of the chicken with cajun seasoning.
- Heat olive oil in a large skillet over medium heat. Cook chicken for about 3-4 minutes per side until golden brown. Add chicken stock, cover, and simmer for an additional 5 minutes. Remove from pan.
- In the same skillet, melt butter over medium heat, add minced garlic, and cook until fragrant. Season with salt and pepper.
- Stir in white grape juice and cook for about 2 minutes to reduce slightly. Add more chicken stock and lemon juice, then gently stir in half-and-half.
- Add angel hair pasta directly into the sauce; simmer while stirring frequently until al dente.
- Gradually mix in Parmesan cheese until melted. Garnish with fresh parsley before serving.
