Ingredients
- 1.5 lbs chicken tenderloins
- 12 oz dry linguini pasta
- 4 tablespoons butter
- 6 garlic cloves (minced)
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 3/4 cup white grape juice
- 1 cup chicken stock
- 2.5 – 3 cups half and half
- 2 tablespoons lemon pepper seasoning
- 2/3 cup grated parmesan cheese
Instructions
- Season chicken tenderloins with olive oil and lemon pepper seasoning.
- In a large deep skillet, heat olive oil over medium-low heat and cook the chicken for about 3 minutes per side until fully cooked. Set aside.
- In the same skillet, melt butter and sauté minced garlic for about a minute until fragrant. Add white grape juice and reduce for about 4-5 minutes.
- Stir in lemon juice, chicken stock, and half and half; whisk in additional lemon pepper seasoning and freshly cracked pepper.
- Add dry linguini to the pan; once it softens after about a minute, push it into the liquid completely.
- Simmer for about 8-10 minutes until pasta is al dente, stirring occasionally.
- Mix in grated parmesan until well combined, then top with cooked chicken tenders and garnish with lemon zest.
