  • 1½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 2 tbsp poppy seeds

  • ½ cup sugar

  • 1 cup cottage cheese (small curd or blended smooth)

  • 2 large eggs

  • ¼ cup vegetable oil or melted butter

  • ¼ cup milk (any kind)

  • 1 tbsp lemon zest (about 2 lemons)

  • 3 tbsp fresh lemon juice

  • 1 tsp vanilla extract

Optional Add-ins:

  • 2 tbsp honey for extra sweetness

  • ¼ cup white chocolate chips

  • A sprinkle of coarse sugar on top for a crunchy finish


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Line a muffin pan with paper liners or lightly grease with non-stick spray.

Step 2: Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, oat flour, baking powder, baking soda, salt, poppy seeds, and sugar.

Step 3: Mix Wet Ingredients
In another bowl, whisk together the cottage cheese, eggs, oil, milk, lemon zest, lemon juice, and vanilla extract until smooth.

Step 4: Combine Wet and Dry
Pour the wet ingredients into the dry ingredients.
Gently stir until just combined—don’t overmix to keep the muffins tender.

Step 5: Fill the Muffin Pan
Divide the batter evenly among the muffin cups, filling about ¾ full.
Sprinkle with coarse sugar if desired.

Step 6: Bake
Bake for 16–18 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
