Instructions
Step 1: Cook the Potatoes
Heat olive oil in a large skillet over medium heat.
Add diced potatoes and season with paprika, garlic powder, salt, and pepper.
Cook for 10–12 minutes, stirring occasionally, until golden and crispy.
Alternatively, roast them in the oven at 400°F (200°C) for 20–25 minutes until crispy.
Step 2: Scramble the Eggs
In a bowl, whisk together eggs and milk.
Pour into a nonstick skillet over medium heat.
Scramble gently, stirring often, until soft and fluffy.
Season with a pinch of salt and pepper.
Step 3: Assemble the Bowls
Divide the crispy potatoes among 4 bowls.
Top each with scrambled eggs, crumbled bacon, shredded cheddar cheese, diced avocado, cherry tomatoes, and green onions.
Step 4: Garnish & Serve
Sprinkle with fresh parsley.
Serve immediately with optional toppings like salsa, hot sauce, or sour cream.
Notes
Crisp the Potatoes Well – Let them sit undisturbed in the pan for a few minutes before flipping to get that golden crust.
Don’t Overcook the Eggs – Keep them soft and fluffy for the best texture.
Customize the Toppings – Use whatever veggies or proteins you love.
Serve Immediately – Best when fresh and hot for the ultimate breakfast experience.
