  • For the Potato Balls:

    • 2 cups cold mashed potatoes (leftover or freshly made and chilled)
    • 1 cup shredded cheddar cheese (sharp or mild)
    • ½ cup cooked bacon, crumbled (about 4 strips)
    • ¼ cup green onions, finely chopped
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and black pepper to taste
  • For Breading and Frying:

    • 1 cup all-purpose flour
    • 2 large eggs (beaten)
    • 1½ cups panko breadcrumbs (for extra crunch)

Instructions

Step 1: Prepare the Potato Mixture

  1. In a large mixing bowl, combine cold mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and pepper.
  2. Mix well until all ingredients are evenly distributed.
  3. Scoop about 1-2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is used.
  4. Place the formed potato balls on a baking sheet and refrigerate for at least 30 minutes. This helps them hold their shape during frying.

Step 2: Bread the Potato Balls

  1. Set up a breading station with three shallow bowls:
    • Bowl 1: All-purpose flour
    • Bowl 2: Beaten eggs
    • Bowl 3: Panko breadcrumbs
  2. Roll each potato ball in the flour, shaking off any excess.
  3. Dip it into the beaten eggs, ensuring it’s fully coated.
  4. Finally, roll it in the panko breadcrumbs, pressing lightly to ensure the breadcrumbs stick.
  5. Return the breaded potato balls to the baking sheet.
