  • 10 cups water
  • 4 tablespoons butter
  • 1 minced shallot
  • 2 large diced carrots
  • 3 diced celery stalks
  • 2 teaspoons minced garlic
  • 1 teaspoon minced fresh thyme
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 1.5 cups dry white grape juice
  • 5 cups lobster stock
  • 1 cup heavy cream
  • Kosher salt and pepper to taste

Instructions

  1. Remove meat from lobster tails using kitchen shears; chop into bite-sized pieces.
  2. In a large pot, melt butter over medium heat; sauté shallots, carrots, celery, and garlic until softened (about 5 minutes).
  3. Stir in thyme and tomato paste; cook for an additional 2 minutes. Add flour to create a roux.
  4. Gradually whisk in dry white grape juice, then add water and lobster stock; bring to a simmer and cook for 30 minutes.
  5. Blend the mixture until smooth using an immersion blender or in batches in a standard blender.
  6. Return blended soup to heat; stir in heavy cream and chopped lobster meat, adjusting seasoning with salt and pepper.
