Ingredients
- 4 lobster tails
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 carrots, peeled and finely chopped
- 2 stalks celery, finely chopped

- 3 tablespoons all-purpose flour
- 4 cups lobster stock (or seafood stock)
- 3/4 cup heavy cream
Instructions
- Remove the meat from the lobster tails and chop into large pieces.
- In a heavy-bottomed pot, heat butter and olive oil over medium heat. Sauté onion, carrots, and celery until softened.
- Stir in minced garlic and herbs; cook until fragrant.
- Add tomato paste and flour; stir well and cook for about two minutes.
- Gradually pour in the stock while stirring, then bring to a boil and simmer for 20 minutes.
- Blend the soup until smooth using an immersion blender.
- Return to low heat; stir in heavy cream and any remaining lobster meat. Warm through without boiling.
