  • 4 lobster tails
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and finely chopped
  • 2 stalks celery, finely chopped
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups lobster stock (or seafood stock)
  • 3/4 cup heavy cream

Instructions

  1. Remove the meat from the lobster tails and chop into large pieces.
  2. In a heavy-bottomed pot, heat butter and olive oil over medium heat. Sauté onion, carrots, and celery until softened.
  3. Stir in minced garlic and herbs; cook until fragrant.
  4. Add tomato paste and flour; stir well and cook for about two minutes.
  5. Gradually pour in the stock while stirring, then bring to a boil and simmer for 20 minutes.
  6. Blend the soup until smooth using an immersion blender.
  7. Return to low heat; stir in heavy cream and any remaining lobster meat. Warm through without boiling.
  8. Taste and adjust seasoning before serving hot.
