- 4 tails of raw lobster
- 10 cups water
- 4 tablespoons butter
- 1 minced shallot
- 2 large diced carrots
- 3 diced celery stalks
- 2 teaspoons minced garlic
- 1 teaspoon minced fresh thyme
- 1/4 cup tomato paste
- 1/4 cup all-purpose flour
- 1.5 cups dry white grape juice
- 5 cups lobster stock (or seafood stock)
- 1 cup heavy cream
- Salt and pepper to taste
