  • 2 tbsp butter
  • 1 shallot, diced
  • 1 tsp garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 3/4 cup dry white grape juice
  • 2 cups heavy cream
  • 2 tsp Old Bay seasoning
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 1/2 cups cooked lobster, chopped
  • Fresh parsley for garnish
  • Parmesan cheese for garnish
  • 12 ounces cheese ravioli

Instructions

  1. In a large saucepan over medium heat, melt the butter. Add the diced shallot and sauté for about 3 minutes until soft; then add minced garlic and cook for an additional minute.
  2. Stir in dried thyme and basil, cooking for another minute until fragrant.
  3. Pour in dry white grape juice, stirring with a wooden spoon for about 1–2 minutes.
  4. Gradually add heavy cream along with Old Bay seasoning; whisk to combine and bring to a simmer. Cook for approximately 10 minutes until thickened slightly.
  5. While the sauce simmers, prepare ravioli according to package instructions and set aside.
  6. Incorporate the cooked lobster into the sauce, cooking for an additional 5 minutes. Adjust seasoning if needed before removing from heat.
  7. Serve over ravioli and garnish with fresh parsley and grated Parmesan cheese.
