  • 2 cups shredded Colby Jack cheese

  • 1 pound ground beef

  • 1/2 cup diced bell pepper
  • 1 teaspoon Italian seasoning
  • 24 ounces pasta sauce
  • 15 ounces petite diced tomatoes (drained)

Instructions

  1. Cook the elbow pasta in boiling water for 9–10 minutes until al dente; do not drain.
  2. Stir in butter and evaporated milk until heated through. Add cheddar and Colby Jack cheese, mixing until melted.
  3. In a skillet, cook ground beef with onions and bell peppers until browned; drain excess grease.
  4. Mix in pasta sauce, drained tomatoes, and seasonings. Simmer gently.
  5. In a casserole dish, layer macaroni and cheese followed by meat sauce; repeat layers and top with remaining cheese.
  6. Bake uncovered at 350°F for 15 minutes; broil for an additional 2–3 minutes until golden brown.
