- 2 tbsp Butter
- 1/2 tbsp Sun-Dried Tomato Oil
- 1 Yellow Onion, diced
- 2 Carrots, diced
- 2 Ribs of Celery, diced
- 6 Garlic Cloves, minced
- 3 tbsp Tomato Paste
- 4 cups Chicken Broth
- 1 lb Shelf Stable Gnocchi
- 3 Cups Cooked, Shredded Chicken
- 1 Cup Heavy Cream
- 4 oz Cream Cheese, softened
- Fresh Spinach and Basil for garnish
Instructions
- In a large pot, melt butter and sun-dried tomato oil over medium heat. Add onion, carrots, celery, salt, pepper, garlic seasoning blend, herbs de Provence, and red pepper flakes. Cook for about five minutes until softened.
- Stir in sun-dried tomatoes and create a well in the center of the pot; add tomato paste and cook for three minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth (or bouillon mixed with water) along with heavy cream; bring to a boil.
- Add gnocchi and shredded chicken; boil uncovered for three to four minutes until gnocchi float.
- Turn off heat; stir in cream cheese until melted and then add Parmesan cheese.
- Fold in chopped spinach and basil; season to taste with salt and pepper before letting it sit for five to ten minutes to thicken.
