  • 2 tbsp Butter
  • 1/2 tbsp Sun-Dried Tomato Oil
  • 1 Yellow Onion, diced
  • 2 Carrots, diced
  • 2 Ribs of Celery, diced
  • 6 Garlic Cloves, minced
  • 3 tbsp Tomato Paste
  • 4 cups Chicken Broth
  • 1 lb Shelf Stable Gnocchi
  • 3 Cups Cooked, Shredded Chicken
  • 1 Cup Heavy Cream
  • 4 oz Cream Cheese, softened
  • Fresh Spinach and Basil for garnish

Instructions

  1. In a large pot, melt butter and sun-dried tomato oil over medium heat. Add onion, carrots, celery, salt, pepper, garlic seasoning blend, herbs de Provence, and red pepper flakes. Cook for about five minutes until softened.
  2. Stir in sun-dried tomatoes and create a well in the center of the pot; add tomato paste and cook for three minutes. Add minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth (or bouillon mixed with water) along with heavy cream; bring to a boil.
  4. Add gnocchi and shredded chicken; boil uncovered for three to four minutes until gnocchi float.
  5. Turn off heat; stir in cream cheese until melted and then add Parmesan cheese.
  6. Fold in chopped spinach and basil; season to taste with salt and pepper before letting it sit for five to ten minutes to thicken.
