  • 1/2 cup dry white grape juice
  • 4 cups chicken broth
  • 1.5 cups uncooked rotini or fusilli pasta
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese (plus more for serving)
  • 23 cups (packed) fresh baby spinach
  • 1/2 cup (loosely packed) fresh basil (torn/sliced)
  • Salt & pepper (to taste)

Instructions

  1. In a soup pot over medium-high heat, combine olive oil, butter, and chopped onion. Sauté for about 5 minutes until the onion is translucent.
  2. Stir in minced garlic, tomato paste, sun-dried tomatoes, Italian seasoning, oregano, and optional crushed red pepper flakes. Cook until fragrant.
  3. Pour in dry white grape juice and simmer for 1-2 minutes.
  4. Add chicken broth and bring to a boil. Stir in uncooked rotini pasta, reduce heat to low, cover slightly, and simmer for about 10 minutes.
  5. Mix in heavy cream and cooked chicken; cook until the pasta is tender.
  6. Stir in fresh spinach and basil before serving. Adjust seasoning with salt and pepper.
