  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth
  • 4 oz cream cheese (softened)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes (julienned)
  • 1 tsp dried oregano leaves
  • 1 tsp dried thyme leaves
  • ½ tsp dried rosemary leaves
  • 1 tsp table salt
  • ½ tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cabbage into 8 wedges while keeping the core intact.
  3. Heat olive oil in a cast iron skillet over medium-high heat and sear cabbage wedges until golden brown on both sides. Season with salt and pepper.
  4. Lower the heat and add butter to the skillet; sauté onions until softened, then add garlic.
  5. Deglaze the pan with chicken broth, scraping up any browned bits.
  6. Whisk in cream cheese until smooth; then stir in heavy cream, sun-dried tomatoes, herbs, salt, black pepper, and optional red pepper flakes.
  7. Stir in grated Parmesan until melted; nestle cabbage back into the skillet and spoon sauce over them.
  8. Cover and bake for about 45 minutes; uncover and baste before baking for an additional 15-20 minutes until tender.
