  • 15 ounces ricotta cheese
  • 16 ounces mozzarella cheese, divided
  • 6 ounces parmesan cheese, divided
  • 1 egg
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup carrots, diced
  • 3/4 cup onion, diced
  • 1/2 cup celery, diced
  • 1 1/4 pounds lean ground beef
  • 1/2 pound ground chicken sausage
  • 229 ounce cans tomato sauce
  • 229 ounce cans crushed tomatoes in puree
  • 2 tablespoons tomato paste
  • 1/2 cup red grape juice
  • 2 tablespoons Italian Herb seasoning
  • 116 ounce package lasagna noodles
  • 8 ounces provolone cheese slices

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine ricotta, 8 ounces mozzarella, 2 ounces parmesan, egg, salt, pepper, parsley, and basil; mix until smooth.
  3. In a skillet over medium heat, sauté garlic in olive oil. Add diced carrots, onion, and celery; cook until softened.
  4. Stir in ground beef and chicken sausage; cook until browned. Drain excess fat.
  5. Add tomato sauce, crushed tomatoes, tomato paste, grape juice, Italian seasoning, and sugar; simmer for at least 20 minutes.
  6. In a baking dish: spread meat sauce on the bottom then layer noodles followed by half the cheese mixture and more meat sauce; repeat layers finishing with meat sauce on top.
  7. Top with remaining mozzarella and provolone cheeses.
  8. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15-20 minutes until bubbly.
