Ingredients

For the Meatloaf:
1 lb ground beef
½ lb ground turkey or chicken
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
2 eggs
½ cup milk
1 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tsp salt
½ tsp black pepper
1 tsp dried thyme or Italian seasoning

For the Mushroom Gravy:
2 tbsp butter or olive oil
1 small shallot or onion, finely chopped
2 cups mushrooms, sliced (cremini, button, or mixed)
1 tbsp flour
1½ cups beef or vegetable broth
½ tsp soy sauce (adds umami)
Salt and pepper, to taste
1 tsp fresh thyme or parsley (optional)

Optional Add-Ins:
Chopped fresh herbs (parsley, rosemary)
Grated carrot or zucchini in the meat mixture
Dash of hot sauce in the gravy


Instructions

Step 1: Preheat & Prep
Preheat oven to 375°F (190°C).
Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2: Make the Meatloaf Mixture
In a large bowl, combine ground beef, ground turkey, breadcrumbs, onion, garlic, eggs, milk, Worcestershire, tomato paste, salt, pepper, and herbs.
Mix gently with your hands or a spoon until just combined—don’t overmix.

Step 3: Shape & Bake
Form the mixture into a loaf shape and place it in the prepared pan or on the baking sheet.
Bake for 45–55 minutes, or until internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.

Step 4: Make the Mushroom Gravy
While the meatloaf bakes, melt butter in a skillet over medium heat.
Add shallot and cook for 2 minutes, then add mushrooms.
Sauté until mushrooms release moisture and turn golden brown, about 8–10 minutes.
Sprinkle flour over mushrooms and stir for 1–2 minutes.
Gradually whisk in broth, soy sauce, salt, and pepper.
Simmer for 5–7 minutes until thickened. Add fresh herbs if using.

 

Step 5: Slice, Pour & Serve
Slice the rested meatloaf and serve with a generous spoonful of warm mushroom gravy.
Pair with mashed potatoes, rice, or roasted vegetables.

Notes

Don’t overmix – Keeps the meatloaf tender and juicy
Use a mix of meats – Ground turkey or chicken lightens the texture
Soak your breadcrumbs – Add them to milk before mixing for extra moisture
Brown the mushrooms – Gives the gravy deeper flavor
