Ingredients

For the Ground Chicken Filling:
1 lb ground chicken
1 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
½ tsp ground cumin
½ tsp smoked paprika
¼ tsp black pepper
½ tsp salt
Juice of ½ lemon
2 tbsp chopped fresh parsley

For the Pitas:
4 whole wheat or regular pita breads (or low-carb option)
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ red onion, thinly sliced
½ cup shredded romaine or iceberg lettuce
¼ cup crumbled feta cheese (optional)

For the Yogurt Sauce:
½ cup plain Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, finely grated
Salt and pepper to taste


Instructions

Step 1: Cook the Ground Chicken
Heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for 30 seconds until fragrant.
Add ground chicken, breaking it up with a spatula.
Sprinkle with oregano, cumin, smoked paprika, salt, and pepper.
Cook for 6–8 minutes until fully cooked and slightly browned.
Stir in lemon juice and fresh parsley. Remove from heat and set aside.

Step 2: Make the Yogurt Sauce
In a small bowl, mix Greek yogurt, olive oil, lemon juice, and grated garlic.
Season with salt and pepper to taste.
Chill in the fridge while assembling the pitas.

Step 3: Prepare the Veggies
Dice the cucumber, halve the cherry tomatoes, thinly slice red onion, and shred the lettuce.
Set toppings aside for quick assembly.

Step 4: Assemble the Pitas
Warm pita breads slightly in a skillet or microwave.
Spread a generous spoonful of yogurt sauce inside each pita.
Spoon in a portion of the seasoned ground chicken.
Top with tomatoes, cucumber, red onion, lettuce, and feta if using.
Drizzle with more yogurt sauce or a squeeze of lemon if desired.

 

Step 5: Serve & Enjoy
Serve immediately while warm and fresh. Add olives or a side salad for an extra Mediterranean touch.
