For the Filling:

  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • ¾ cup crumbled feta cheese

  • ¼ cup cream cheese, softened

  • 1 tsp dried oregano

  • ½ tsp dried dill or parsley

  • ¼ tsp salt

  • ¼ tsp black pepper

For the Crisps:

  • 1 sheet puff pastry or 6 phyllo sheets (thawed if frozen)

  • 2 tbsp melted butter or olive oil (for brushing)

  • 1 egg, beaten (for egg wash)

  • Sesame seeds or nigella seeds (optional topping)


Instructions

Step 1: Make the Spinach & Feta Filling

  1. Heat olive oil in a skillet over medium heat.

  2. Add garlic and sauté for 30 seconds, then add chopped spinach.

  3. Cook until wilted (or until moisture is evaporated if using frozen spinach). Let cool slightly.

  4. In a bowl, combine cooked spinach with feta, cream cheese, oregano, dill, salt, and pepper. Mix until creamy and well blended.

Step 2: Prepare the Pastry
5. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
6. Roll out puff pastry on a lightly floured surface into a rectangle.
7. Cut into squares or rectangles, about 3–4 inches each.
(If using phyllo dough, layer 3 sheets at a time, brushing each with melted butter, then cut into desired size.)

Step 3: Fill & Fold
8. Spoon about 1 tablespoon of the filling onto each pastry square.
9. Fold over into a triangle or rectangle and press edges to seal (use a fork for a crimped edge).
10. Place on the baking sheet.

Step 4: Brush & Bake
11. Brush tops with beaten egg for a golden finish.
12. Sprinkle with sesame seeds or nigella seeds if using.
13. Bake for 18–22 minutes, or until puffed and golden brown.

Step 5: Cool & Serve
14. Let cool for 5 minutes. Serve warm or at room temperature with a dip or on their own.

Notes

Drain Spinach Well – Too much moisture will make the crisps soggy.
Seal Tightly – Press the edges firmly so filling stays inside.
Use Full-Fat Cheese – Adds extra creaminess and better flavor.
Make Mini Versions – Use smaller squares for bite-size appetizers.
Customize the Filling – Add olives, sun-dried tomatoes, or caramelized onions for a twist.
