Instructions

Step 1: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. Season both sides of the chicken with salt, black pepper, oregano, paprika, and garlic powder.

Step 2: Make the Stuffing

  1. In a bowl, mix the chopped spinach, feta cheese, sun-dried tomatoes, red pepper flakes (if using), and lemon juice.

Step 3: Stuff and Secure

  1. Spoon the stuffing evenly into each chicken breast pocket.
  2. Use toothpicks to secure the opening so the filling stays inside while cooking.

Step 4: Sear the Chicken

  1. Heat olive oil in a large oven-safe skillet over medium-high heat.
  2. Sear the stuffed chicken for 3 minutes per side until golden brown.

Step 5: Bake to Perfection

  1. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through (internal temperature of 165°F or 75°C).
  2. Remove from the oven, let it rest for a few minutes, and remove the toothpicks before serving.
