  • 8 ounces cream cheese (softened)
  • ¼ cup sour cream
  • 1 ½ cups shredded cooked chicken
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions (thinly sliced)
  • 2 tablespoons finely chopped green bell pepper
  • 2 tablespoons red bell pepper (finely chopped)
  • 2 tablespoons chopped fresh cilantro
  • 1 ½ tablespoons taco seasoning
  • 4 burrito-sized tortillas

Instructions

  1. In a mixing bowl, combine softened cream cheese and sour cream. Beat with a hand mixer until smooth.
  2. Stir in shredded chicken, cheddar cheese, green onions, bell peppers, cilantro, and taco seasoning until well mixed.
  3. Lay out a tortilla on a clean surface and spread one-fourth of the filling evenly over it.
  4. Roll the tortilla tightly from one end to form a log. Repeat with remaining tortillas and filling.
  5. Wrap each log in plastic wrap and refrigerate for at least 4 hours or overnight.
  6. Unwrap logs, slice into ½ inch pieces, and serve with salsa and guacamole.
