  6. Increase mixer speed to high and slowly pour in hot syrup while continuing to beat.
  7. Beat the mixture for about 15-20 minutes until it thickens and loses its gloss.
  8. Stir in chopped pecans (if using) and vanilla extract quickly.
  9. Scoop rounded teaspoons onto the prepared baking sheet.
  10. Let the candy sit at room temperature overnight until dry.
