For the Beef:

  • 1 lb flank steak or sirloin, thinly sliced against the grain

  • 2 tbsp cornstarch

  • 2 tbsp vegetable oil (for searing)

  • Salt and pepper to taste

For the Sauce:

  • ½ cup low-sodium soy sauce

  • ⅓ cup brown sugar (light or dark)

  • ¼ cup water

  • 1 tbsp hoisin sauce (adds depth)

  • 1 tbsp rice vinegar or apple cider vinegar

  • 1½ tsp sesame oil

  • 4 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • ½ tsp red pepper flakes (optional, for heat)

For the Noodles & Garnish:

  • 10 oz lo mein noodles, rice noodles, or spaghetti

  • 2 green onions, sliced

  • 1 tsp toasted sesame seeds (optional)

  • Steamed broccoli or snap peas (optional add-in)


Instructions

Step 1: Cook the Noodles

  1. Bring a large pot of salted water to a boil.

  2. Cook noodles according to package instructions until just tender.

  3. Drain and set aside. Toss with a little sesame oil to prevent sticking.

Step 2: Prepare the Beef

  1. In a bowl, toss the sliced beef with cornstarch until well coated.

  2. Heat oil in a large skillet or wok over medium-high heat.

  3. Sear the beef in batches (don’t overcrowd the pan) until browned and just cooked through, about 2–3 minutes per side.

  4. Remove the beef and set aside.

Step 3: Make the Sauce

  1. In the same skillet, reduce heat to medium.

  2. Add a little more oil if needed, then sauté garlic and ginger for 30 seconds until fragrant.

  3. Stir in soy sauce, brown sugar, water, hoisin sauce, vinegar, sesame oil, and red pepper flakes.

  4. Simmer for 2–3 minutes until slightly thickened.

Step 4: Combine Everything

  1. Return the seared beef to the skillet and toss to coat in the sauce.

  2. Add the cooked noodles and gently toss until everything is well combined and heated through.

  3. Stir in sliced green onions and any optional steamed vegetables.

Step 5: Garnish and Serve

  1. Plate the noodles and beef hot.

  2. Sprinkle with sesame seeds and more green onions for a fresh finish.

  3. Serve with lime wedges or chili sauce if desired.
