- 4 cups chicken broth
- 1 (15-ounce) can diced tomatoes
- 8 ounces tomato sauce
- 2 bay leaves
- 1 tablespoon Cajun seasoning (salt-free)
- Salt to taste
- 12 ounces fresh or frozen sliced okra
- Cooked basmati rice for serving
Instructions
- To make the roux, melt butter in a large deep pot over medium-low heat. Gradually whisk in flour until smooth and cook for about 30–40 minutes until dark brown.
- Add chopped onion, bell pepper, and celery to the roux. Sauté for about 6–8 minutes until softened. Stir in minced garlic and cook for an additional minute.
- Mix in chicken broth, diced tomatoes, tomato sauce, bay leaves, Cajun seasoning, and salt. Bring to a boil then reduce heat and let simmer uncovered for about 45 minutes.
- Add sliced okra to the pot and simmer for another 10 minutes. While it simmers, heat oil in a skillet over medium-high heat and brown the chicken sausage.
- Incorporate browned sausage and shrimp into the gumbo, allowing everything to simmer together for another 4–5 minutes until shrimp are pink and cooked through.
