  • 1 pound peeled and deveined raw shrimp
  • ½ cup butter
  • ½ cup all-purpose flour
  • 1 cup chopped yellow onion
  • 1 chopped green bell pepper
  • 1 cup chopped celery
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 (15-ounce) can diced tomatoes
  • 8 ounces tomato sauce
  • 2 bay leaves
  • 1 tablespoon Cajun seasoning (salt-free)
  • Salt to taste
  • 12 ounces fresh or frozen sliced okra
  • Cooked basmati rice for serving

Instructions

  1. To make the roux, melt butter in a large deep pot over medium-low heat. Gradually whisk in flour until smooth and cook for about 30–40 minutes until dark brown.
  2. Add chopped onion, bell pepper, and celery to the roux. Sauté for about 6–8 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Mix in chicken broth, diced tomatoes, tomato sauce, bay leaves, Cajun seasoning, and salt. Bring to a boil then reduce heat and let simmer uncovered for about 45 minutes.
  4. Add sliced okra to the pot and simmer for another 10 minutes. While it simmers, heat oil in a skillet over medium-high heat and brown the chicken sausage.
  5. Incorporate browned sausage and shrimp into the gumbo, allowing everything to simmer together for another 4–5 minutes until shrimp are pink and cooked through.
  6. Serve hot over basmati rice and garnish with sliced scallions.
