Ingredients

  • 1 cup Old-fashioned oats
  • 1/2 cup Protein powder (chocolate or vanilla)
  • 1/2 cup Unsweetened cocoa powder
  • 1/4 cup Maple syrup (or honey)
  • 24 oz. AE Dairy cottage cheese
  • 1 tbsp Vanilla extract
  • 3/4 cup Peanut butter (softened)
  • 1 tbsp Coconut oil (melted)
  • 1 cup Chocolate chips (divided)
  • Flaky sea salt (optional)

Instructions

  1. Blend the oats, maple syrup, cottage cheese, vanilla extract, and softened peanut butter until smooth.
  2. In a mixing bowl, combine the blended mixture with protein powder and cocoa powder. Fold in 1/4 cup of chocolate chips.
  3. Scoop out tablespoon-sized portions and roll into balls. Freeze for 5-10 minutes.
  4. Melt remaining chocolate chips with coconut oil; dip each bite into this mixture and let excess drip off.
  5. Chill until set in the fridge.
