Ingredients

For the Crust:
24 Oreo cookies (crushed into fine crumbs)
5 tbsp unsalted butter, melted

For the Cheesecake Filling:
16 oz cream cheese, softened
½ cup granulated sugar
1 tsp vanilla extract
1 cup heavy whipping cream
¼ cup red, white, and blue sprinkles (plus more for topping)

For Topping:
8 Oreo cookies, chopped
2 tbsp additional sprinkles (optional)


Instructions

Step 1: Make the Crust
Line a 9×9-inch pan with parchment paper.
Combine crushed Oreos and melted butter in a bowl.
Press firmly into the bottom of the pan.
Freeze crust for 15–20 minutes while preparing the filling.

Step 2: Prepare the Cheesecake Filling
In a large bowl, beat cream cheese until smooth.
Add sugar and vanilla extract, and beat until combined.
In a separate bowl, whip the heavy cream to stiff peaks.
Fold whipped cream gently into the cream cheese mixture.
Stir in the sprinkles carefully to avoid color bleeding.

Step 3: Assemble the Bars
Spread the cheesecake filling evenly over the chilled crust.
Top with chopped Oreos and additional sprinkles if desired.
Cover and refrigerate for at least 4 hours or overnight.

 

Step 4: Slice & Serve
Once set, lift the cheesecake out of the pan using the parchment.
Cut into 16 bars using a sharp knife.
Serve chilled for best texture and flavor.
