Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/4 cups rolled oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 3/4 cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 (14 oz.) can sweetened condensed milk
- 1 tablespoon lemon zest
- 1/3 cup lemon juice (about 2 1/2 large lemons)
- 2 large egg yolks
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, oats, salt, baking soda, granulated sugar, and brown sugar.
- Stir in melted butter and vanilla until combined.
- Press about two-thirds of the mixture into a greased 9×13 inch baking pan to form the crust.
- In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and vanilla until smooth; pour over the crust.
- Sprinkle the remaining oatmeal mixture over the lemon filling evenly.
- Bake for about 40 minutes or until golden brown on top.
- Allow to cool completely before cutting into squares.
